Meet Our Chef
Carmen Maldonado
Carmen Maldonado, affectionately known as Chiky, is a Honduran fusion chef with a vibrant culinary career spanning over three decades and a respected culinary figure in the Mandeville area. Originally from Comayagua, Honduras, Chiky's passion for food was ignited at a young age, inspired by her homeland's rich tapestry of flavors and traditions.
After relocating to New Orleans more than 40 years ago, Chiky immersed herself in the city's renowned culinary scene, seamlessly blending her Honduran heritage with the vibrant flavors of the Big Easy and New Mexican regional cuisine. Her culinary expertise was further refined through her experience owning a disco in Honduras, working in casinos, and later contributing her talents to Mi Mamacita's restaurant. There, she played a pivotal role in revitalizing and enhancing the menu, establishing it as Mandeville's premier destination for authentic New Mexican fusion cuisine.
Chiky is committed to making cooking accessible and enjoyable for everyone, offering a diverse array of dishes that celebrate the vibrant flavors of Latin cuisine. Her legacy is defined by her unwavering dedication to sharing her love for food and inspiring others to embark on their own culinary journeys.
